

Lemongrass Drink
Makes 4
Refreshing and easy to make, packed full of fresh lemongrass and mint. Perfect for the hot summer days.
Drink
5 lemongrass stalks
1L cold water
1 drop pandan extract
125ml sugar syrup
9 mint leaves
3 handful ice cubes
Sugar Syrup
5 lemongrass stalks 500ml water
1L cold water 375gm castor sugar or Palm Sugar
1 drop pandan extract
Bring water and sugar to the boil. Simmer for 30 minutes or until the syrup is slightly thick. Cool
Add lemongrass, water and pandan extract to a bar blender. Blitz on high for 3 minutes. Strain the liquid twice through very fine muslin cloth. Add sugar syrup then pour onto the ice cubes. Serve with a mint leaf.
